Lemon chicken with broccoli
Ingredients:
- 2 boneless, skinless chicken breasts (sliced into thin strips)
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon grated ginger (optional, for extra flavor)
- 1/4 cup chicken broth or water
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1 tablespoon soy sauce
- 1 tablespoon honey or maple syrup
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Optional garnish: lemon slices and chopped fresh parsley
Instructions:
- Prepare the broccoli: Steam or blanch the broccoli florets for 3-4 minutes until they are just tender but still vibrant green. Set aside.
- Cook the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken strips with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes until golden brown and cooked through, stirring occasionally. Remove the chicken from the skillet and set aside.
- Sauté garlic and ginger: In the same skillet, add the remaining tablespoon of olive oil, along with the minced garlic and grated ginger (if using). Cook for 1 minute until fragrant.
- Make the lemon sauce: Add the chicken broth, lemon juice, soy sauce, honey, and lemon zest to the skillet. Stir and cook for 2-3 minutes, allowing the sauce to reduce slightly.
- Combine the chicken and broccoli: Return the cooked chicken and steamed broccoli to the skillet. Toss everything together, making sure the chicken and broccoli are well coated in the lemon sauce. Cook for an additional 2 minutes to heat everything through.
- Serve: Transfer to a serving plate and garnish with lemon slices and fresh parsley if desired.
